CULINARY
FOOD
With more than 60 years of experience, THAI Catering delivers culinary onboard experience, International and Halal food, for all airlines in a one-stop catering service. We care about food hygiene as same as airlines do for the passengers so we select the finest, freshest, best-quality raw materials and conscientiously clean them at the preliminary step. We have the standardized production processes under ISO9001, GHP, HAL-Q, HALAL and HACCP to ensure hygiene standards.
In addition, we value every step of the production and delivery processes, starting from receiving, storing, preparing, cooking, blast chilling, portioning, packing, food tray setting, assembling and loading. Especially for authentic taste, our chefs are expertise in Western, Arabic, Chinese, Japanese, Indian and Thai food to ensure the best satisfaction of the world Airlines.


HOT KITCHEN
Our hot kitchen produces a variety of menus and ethnicities over the world such as Western, Chinese, Japanese, Middle Eastern, Indian and Thai food by selecting good quality raw materials and awareness of hygiene standards in every step, particularly the cleaning process and a cooking process that we control the temperature according to the hygiene standards.
We have divided hot kitchen areas according to cooking type: Bake, Steam, Boil, Fry, Stir-Fry, Blanch and Soup, as well as provide zones for Thai/Chinese, Western and Special meals. There are also dedicated areas for Japanese and First-class meals to assemble and produce food in each menu efficiently.
Every process in our kitchen is managed by well-trained staff. Such as “Omelet” the popular breakfast is hand-made one by one. Therefore, ingredients, flavor, form, consistency and hygiene are very important factors to ensure before delivering to our customers.




COLD KITCHEN
A cold kitchen is a space to prepare food that does not require heat for cooking, therefore the room temperature must be cooler than usual. Whether it’s salad, sandwich and fresh vegetables, they are short-lived ingredients and need freshness. The key to keep these appetizers fresh when served on board is the temperature control.
Our cold kitchen is divided into the food preparation areas for First/Business class and Economy class separately, there’s also a space to make sandwiches only. All portions have been recorded the temperature and time from start to delivery at 12 degrees to finish at 15 degrees which is the temperature that inhibits the growth of microorganisms and bacteria, so the appetizers made by THAI Catering are still fresh and hygienic regarding the international standards. Likewise, we also focus on taste by tasting random checks to match the sample that we promise to our customers.

BAKERY
For good quality and taste of bakery & dessert, This Kitchen is divided in 3 zones which are the bakery zone, confectionary zone and Thai zone to prevent the blending of food and also concern about the food temperature, food safety and hygiene.
Bakery zone is a baking section that uses heat, we can produce a huge selection of bread, pastries, pie, croissant and cake with the high-quality ingredients and supervised by our pastry chef who has experience in MICHELIN-Star restaurants.
Confectionary zone is no heat section that make pudding, tart and other desserts, which crafting with delicacy talented staff. This zone is also a confectionary area for making desserts served in First class and Business class as well.
Thai zone, this section we make only Thai sweets due to difference procedure and raw materials from bakery, create menus and supervised by expert Thai dessert chef in every step of production. We able to make various Thai sweet styles; original and fusion style.
Last but not lease we also have a chocolate making room.





HALAL
It has been known that Halal food has various processes, procedures and ingredients different from common cooking which is a core principle of Muslims. Accordingly, we have a dedicated area for halal food production which every step will go through a process that is strictly in accordance with Islamic provisions. We have been certified for Halal food production standards and Halal Certifications from The Central Islamic Council of Thailand and the Halal Samutprakarn.
We have separated areas for preparing the vegetables, chicken-beef-lamb and seafood. All raw materials and seasonings must be certified halal. There are also areas for storing raw materials and finished foods separately from other foods.
We pay attention from the first step, “Hand washing with clay halal soap.” Every production process will follow Halal principles. Our Halal kitchen produces various halal menus for airlines, including Thai food, international food and bakery.


JAPANESE KITCHEN
THAI Catering has created a Japanese kitchen with the potentiality to produce traditional Japanese cuisine. Every step is controlled by an expert chef who is a native Japanese, starting from selecting fresh and quality ingredients to food plating with delicate attention. We deliver the authentic Japanese cuisine directly to passengers of the world airlines.

FACILITIES
HANDLING
THAI catering provides transportation services of food, beverage and service-equipment to aircraft for more than 50 world leader airlines with high quality and standard. In case of customer airlines use THAI catering for onboard meal production, we can deliver the services that are compatible with all aircraft types.
We have vehicles with temperature cabinet controller to keep products fresh and hygiene, which transport directly to the aircraft at the scheduled time. In every step of services is passing through various aspects of inspection to meet the safety, hygiene and accuracy from the well trained and skilled staff.

LAUNDRY

STORAGE
THAI Catering storage has an estimate area of 8,000 square meters, provides stock control services of raw materials such as flour, rice and soybean oil which used in manufacturing, finished goods, both alcoholic and non-alcoholic beverages, including spare parts for manufacturing, service processes of domestic and international airlines and also Inflight service equipments.
The storage of goods for the production processes is divided into 3 zones: Dry storage, Chilling storage and Frozen storage. Each area is also separated into halal and non-halal.
Accuracy of stock inventory management conduct the manufacturing and service processes smoothly according to THAI Catering’s standards to meet the customer satisfaction.

MISCELLANEOUS ITEMS
THAI Catering provides miscellaneous items covering all customer airlines needs such as drinking water, butter, jam, milk, tea, coffee, newspapers, plastic cups, garbage bags, etc. We also have high technology internationally certified ice maker that can produce 10 tons per day.

AIRLINES LOUNGE SERVICES
Not only inflight catering services, but we also provide the airlines lounge services at Suvarnabhumi airport which we can provide food and beverage, service and operation staff with high standard services and more than two decades of hospitality experience. We are committed to deliver the high quality of services for the airlines lounge which to comforting and relaxing your valued passengers before their departure to destinations.
